Apple and Cinnamon Microwave Mugcakes (GF)


I have literally been counting the days till October so I don’t have to feel bad about the amount of apple and cinnamon I want to consume! And it’s here!!! 🙂 I’m not going lie- I love autumn! I think it might have to do with the fact that spring and summer are so unreliable in Scotland but you can always count on the days getting crisper and the evenings getting darker and I do love a woolly jumper!

Anyway, I was having full on cinnamon apple cravings the other night so decided to see what I could come up with and these microwave mug cakes were delicious!!!

Makes 1 large serving 😉

Just over 1/4 cup gluten free plain flour (I used Doves which worked perfectly)

About 1/8 teaspoon xanthan gum

2 tablespoons sugar

1/4 teaspoon baking powder

1/4 teaspoon cinnamon

1/4 cup milk

2 tablespoons melted salted butter

1/2 teaspoon vanilla essence 

A small amount of sugar and cinnamon mixed together

For the caramelised apples:

1 apple 

2 tablespoons sugar

Start off by chopping your apple into small pieces then popping in a pan with the sugar on a low heat and leave to caramelise while you prepare the cake.

In a small bowl, mix the flour, gum, baking powder, sugar and cinnamon together then add the milk, butter and vanilla essence until nice and smooth.

Spoon the mixture into a microwave-safe mug (I forgot to check before I put mine in but I can happily say that both my microwave and mug are still in one piece!! :)) and top with some of the cinnamon sugar mixture. 

Heat in the microwave for 2 mins then scoop your caramelised apples on top. I’d recommend waiting a few minutes before you tuck in cause that thing will be HOT! 

Get wrapped up in a cosy blanket and enjoy!!! I hope everyone is enjoying autumn as much as I am!
