Chicken & prawn paella


This might seem like too Summery a dish for January but I need a bit of sunshine in my life and paella is delicious any time of the year! 😉 From this recipe, we got a large pan of paella which fed around 6 people.

500g paella rice

500g chopped chicken breast

100g chorizo (look for one with no garlic or onion)

200g frozen cooked prawns

5 spring onions (green parts only)

2 large glasses white wine

1 gluten free vegetable stock cube

1 tsp paprika

1 tsp saffron

1 tbsp garlic-infused oil

Parsley and lemon to garnish


Gently fry the spring onions with the chorizo & chicken in the garlic-infused oil. Remove the chicken from the pan once it is cooked through.

Add the rice to the onions and chorizo and once coated in the oils from the pan, add the vegetable stock, wine, paprika and saffron and reduce.

Leave the rice to soak up all the lovely flavours for a good hour or so, topping up with water as needed (if the rice isn’t cooked through but all the liquid has gone).

Once the rice is almost cooked, add he chicken and prawns until they are heated through then serve with lots of lemon juice and parsley.
