Cheesy sunflower seed muffins

Now if you know me at all, you’ll know that I’m a huge cheese fan! When I was very kindly gifted a seed gift pack from Whitworths, I knew that the sunflower seeds would make a perfect addition to my cheesy muffins!

These are so easy to make and can be adapted according to what you fancy that day! You can change up the cheese used or add bacon, chives, ham, whatever you like! I like to keep things simple though!

This recipe makes 12 muffins.

40 minutes

250g gluten free flour (I used a mixture of 180g GF self-raising flour blend and 70g GF white bread flour blend)
1/2 tsp. baking powder
1 tsp. salt
1 tsp. paprika
50g butter
250ml milk
120g grated cheese
1 tbsp. natural yoghurt
1 tbsp. Whitworths sunflower seeds (and a handful to garnish!)

Mix the flour, baking powder, salt and paprika together. Rub the butter through the dry mix until a breadcrumb-like consistency.

Then add the remaining ingredients and mix thoroughly.

Spoon into a greased muffin tray, sprinkle with a few more sunflower seeds then pop in the oven for 25 minutes.

Eat while hot with a slather of butter or dip into a big bowl of soup!
