I’m a big autumn fan anyway but it also means all the cinnamon, apple, caramely, yummy vibes! My strawberry tarts were such a hit in summer that I decided to rejig them and make these caramel apple cups. No regrets there! They are SO good but so moreish so definitely share these or you’ll happily munch your way through the lot!
For the pastry
250g gluten free plain flour
More butter for greasing
For the filling
5 large apples
1/2 tsp cinnamon
Half a tin of Carnation caramel (or you could be brave and make your own!)
Add the gluten free plain flour, sugar, butter and egg to a large mixing bowl and mix until a dough is formed. Wrap in cling film and refrigerate for at least one hour.
Preheat the oven to 180 degrees C.
Once the dough is cool, roll it out between two sheets of cling film (I find this better than using flour to stop the pastry sticking as gluten free bakes can be powdery and crumbly as it is!) to around 2cm thickness.
Cut into rounds and shape into a greased muffin tin. Pop into the oven for 15 minutes (keep an eye on them as they can brown quickly!!.
Peel and chop the apples into small chunks and add to a saucepan with the remaining sugar and cinnamon and cook on a medium heat until the sugar has melted and the apples have begun to soften and caramelise.
Add a teaspoon of caramel to each tart case then top with the cooked apple mixture.
Serve with cream, custard or on their own!
