This is one of my new faves! Really easy to make, quick, filling and I’ve normally got all the ingredients at home!
This recipe serves 2 lunch-sized portions but you could easily serve with chicken, fish or halloumi for dinner! I like mine with Asda Free From Southern Fried Chicken Steaks (as shown in the photo).
1 can of black beans
4 spring onions or 1 medium sized onion
1 large courgette
1 tbsp. garlic-infused olive oil
1 tsp. curry powder
1 tsp. paprika
1 tsp. smoked paprika
Salt and pepper to taste
Squeeze of lemon
Finely chop and gently fry the spring onions in the garlic oil until soft. Then add sliced courgette, curry powder, paprika and smoked paprika and mix well.
Once the courgette starts to cook and soften, add the black beans and roughly chopped kale.
When everything is heated through and the veggies are cooked, add salt and pepper to taste, mix through some chopped avocado and serve with a squeeze of lemon.
