Vegetable pasta – lunch

Now, this is very similar to a recipe I’ve done previously but by some miracle I had some leftover ratatouille from last nights dinner so I thought I’d share with you what I did with my leftovers! Living on a low FODMAP diet means being prepared and having to cook from scratch almost all the time, if I can make this a bit easier for myself, I’m all for it!! This makes a great, filling and easy lunch dish!

10 minutes

Ingredients

70g gluten free pasta- any can be used but I used spaghetti for this one

Leftover ratatouille (as much or as little as you have!)

Chopped chilli

Chopped spring onions (green part only)

Method

Cook your pasta according to the packet instructions (so important when cooking gluten free pasta!). Once this is almost ready, drain and pop back in the pot.

Add your ratatouille and mix well. If you want to mix it up a bit, you could add some chilli, fresh spring onions or even a bit of Parmesan (gotta love the cheese!)

Waste not, want not and all that! 🙂
