This is one of my staples during the summer cause it’s so fresh and tasty! It can be used as a bruschetta topping, on a sandwich, on its own as a side dish or even as a chilli topping!
It’s so easy to make and you can adapt the recipe depending on how much you need! Also, if red onions are a no-go, simply swap for the green parts of a spring onion!!
Ingredients (for 1 side portion)
1/2 red onion (or 4 spring onions- green parts only)
6 cherry tomatoes/1 large tomato
Handful of basil leaves
1 tsp balsamic glaze
1 tsp extra virgin olive oil
1 tsp white wine vinegar
Salt & pepper
Chop the red onion/spring onions finely and add to a bowl. Chop the tomatoes slightly more roughly (I like more texture!) and add to the onions.
Season with salt and pepper and mix throughly. The tomatoes will start to leak a bit so drain off some of the extra liquid if you like. Then add the white wine vinegar, balsamic glaze and olive oil.
Once this is all mixed together, tear some basil through it and serve (ideally) on top of toasted bruschetta, drizzled with a tiny bit of garlic-infused oil and a sprinkle of Parmesan!
