Spinach and parmesan gnocchi

I hardly ever have gnocchi but I enjoy it so much when I do and I couldn’t believe how easy it is to make! My husband found this gnocchi in Germany and I’ve yet to spot it here in the U.K. but I’ll definitely be keeping an eye out, it’s delicious! This recipe serves 2.

300g Schär gnocchi

2 rashers of bacon

100g lactofree cream

1 glass white wine

4 spring onions (green parts only)

100g spinach

1 tbsp garlic-infused oil

30g grated Parmesan

Salt & pepper


Chop the spring onions and bacon and add to a hot pan with the garlic oil. Once everything starts to soften and brown, add the white wine and simmer until the the wine reduces.

Add the spinach, grated Parmesan and cream, season with salt and pepper and leave to simmer.

If your sauce is a bit thin, mix 1 tsp of cornflour with some lukewarm water and add to the sauce. This should help thicken it.

Bring a pot of salted water to the boil then add the gnocchi and cook for 2 minutes until the gnocchi rises to the top then drain.

Add the gnocchi to the sauce and serve!

Garnish with parmesan and black pepper.
