One thing I miss living a gluten-free life (which kinda goes without saying) is good bread! There is nothing better than a soft sarnie or a crispy loaf so it’s like Christmas for me when I find a gluten free bread product that I love!
We spotted these gluten free baguettes in Morrisons and I just had to try them (they are pretty long dated too so even better!!). One of my husband’s specialities is steak baguette so I was overjoyed to be able to enjoy that again!
These baguettes are delicious! They’re so lovely and soft in the middle, crispy on the outside and best eaten straight from the oven!
Here’s a serving suggestion and one of my favourite dishes! Get the napkins out as you will make a mess but it’ll be worth it!
Recipe for 4 portions:
2 gluten free Schär baguettes
2 medium sized steaks (around 300g each)
100g rocket (dressed with olive oil, white wine vinegar, salt and pepper)
2 red onions
25ml balsamic vinegar
1 tsp sugar
Thyme and rosemary to season
Cream cheese and mustard (mixed together to spread on baguette)
Preheat your oven to 180 degrees.
Chop the onions finely and add to a pot with the balsamic vinegar, sugar, rosemary and thyme and 25ml of water (add more water and a squeeze on balsamic glaze at the end of the sauce is too thick) and leave to reduce then pop your baguettes in the oven.
Season and cook the steak on a griddle pan until cooked to your liking (it has to be medium rare for me!).
Spread the cream cheese and mustard mixture over your baguette then layer with the steak, rocket and caramelised onions.
