Since seeing Heck sausages gradually sneak into my local supermarkets (which I love btw!), I’ve been desperate to try the Chicken Italia ones and I can confirm, they do not disappoint!! I made a really easy tomato and basil rice to have with them and it was delicious! This easy recipe serves 2!
6 Heck Chicken Italia sausages
250g cooked rice
1 tin chopped tomatoes
6 cherry tomatoes
1 tbsp tomato purée
1 tbsp garlic-infused oil
1 tsp paprika
1 tsp chilli powder
1 tsp dried mixed herbs
Handful of basil leaves
Parmesan to serve
In a preheated oven (180 degrees C), cook the sausages for 25 minutes, turning occasionally.
Gently fry the spring onions in the garlic-infused oil in a pan. Once they start to soften, add the chopped cherry tomatoes, tinned tomatoes, tomato purée, paprika, chilli powder, salt and pepper to taste and mix thoroughly.
Turn the heat down, add the mixed herbs, half of the basil and let reduce.
Once the sauce has started to thicken, add the cooked rice (I either use leftover rice or a packet of microwave rice!) and mix well.
When the sausages are ready, chop them into bite-sized pieces and sprinkle over your rice with some extra basil and grated parmesan!
