Halloumi vegetable bake

Sometimes you just need a big tray of veggies for dinner! I always find I need to add something extra so this halloumi vegetable bake ticks all the boxes for me! It’s so easy to prepare and can be prepared in advance then thrown in the oven when needed! This serves 4 large bowls!


45 minutes


2 courgettes

2 peppers

3 large potatoes

2 carrots

1 onion

2 tbsp garlic-infused oil

Salt & pepper 

1 tsp paprika

2 rosemary stalks

2 thyme stalks

1 ball of halloumi

50ml lactofree cream

And any other veg you fancy!


Preheat the oven to 200 degrees C.

Chop all the vegetables and halloumi into small chunks (I’d recommend chopping the potatoes into smaller cubes as they take longer to cook through) and place in a large baking tray.

Drizzle the oil, salt and pepper and paprika over and mix so everything is thoroughly coated. Throw in the rosemary and thyme stalks and mix.

Pop in the oven for 20 minutes then stir thoroughly. Once the vegetables have been in for a further 20 minutes, add the cream, stir and bake for another 5 minutes until the cream is heated through and the vegetables are soft and browning.

Serve and enjoy!
