I absolutely love this salad and it’s great for making a huge bowl and meal prepping for the week. This recipe makes 4 portions so it’s great as either a side dish or a lunch. Such a tasty salad and low FODMAP too! What’s not to love?!
12 black olives
4 tbsp lactofree natural yoghurt
4 gluten free pitta breads
2 tbsp extra virgin olive oil
1 tbsp white wine vinegar
1 tsp dried dill
Salt and pepper
Chop up the cucumber, feta, tomatoes and olives into small bite size pieces.
Mix everything together for the dressing and mix through the chopped ingredients.
Serve with a dollop of yoghurt and a gluten free pitta bread.
Fresh and healthy and ready in a jiffy! 🙂
