Another wee easy salad tonight 🙂 this is a lovely easy one that you can have as a side dish or as a quick veggie lunch! It’s low FODMAP so should be nice and kind to the tummy! Serves 2 as a side dish!
10 cherry tomatoes
1 tsp garlic-infused oil
Pinch of salt and pepper
Pinch of chili flakes
Peel the courgette into long strips and chop the cherry tomatoes. Mix together the courgette and tomatoes with the garlic oil, salt and pepper.
Once everything is well mixed, add to a heated pan and gently fry for 5 minutes until the courgette starts to soften.
Sprinkle with chilli flakes, add a squeeze of lemon juice and serve!
