Low FODMAP beef tacos

So I might have mentioned this before but I LOVE Mexican food! And lucky for me, quite a lot of it is gluten free as they use a lot of corn products 🙂

One of my favourites is tacos and we came up with a simple beef recipe with is perfect for a taco evening! This serves 4 (and some leftovers :D)

Time

20 minutes

Ingredients

500g beef mince (as lean as possible)

4 spring onions (green parts only)

1 carrot

3 tbsp tomato purée

1 tsp paprika

1 tsp smoked paprika

1 tsp chilli powder

1 tbsp garlic-infused oil

1/2 tbsp mascavado sugar

12 corn taco shells

Salt and pepper

Kidney beans, sweetcorn (according to taste and belly!)

Method

Chop the spring onions and carrots very finely and fry with the mince in the garlic oil until brown.

Add the tomato purée, paprika, smoked paprika, chilli powder, sugar and mix. Leave to fry the flavours through for 20-30 minutes on a low heat. Add a tiny bit of water if the mince gets too dry.

Add salt and pepper and more spices to taste.

We also added kidney beans and you could add sweetcorn/chickpeas if you fancy it!

Serve in taco shells with salad, cheddar, salsa, guacamole and sour cream!
