Beef stir fry

So I’m most definitely a carb and dairy girl but as my husband loves Asian-style food, I sometimes have to compromise! It’s only when I start eating this stuff that I realise how much I enjoy it! This is a nice quick recipe which fills you up without feeling stuffed and yucky! I’d recommend finding whatever veg you have and chucking it all in! Here’s how I make it:


15 minutes


300g stir fry beef strips

2 pak choi

100g beansprouts

4 spring onions

Handful of sugar snap peas

4 pieces of baby corn

Handful of broccoli (only if your tummy allows!)

1 tbsp gluten free soy sauce

1 tbsp fish sauce

1 tbsp rice vinegar

3 tbsps vegetable oil

1 thumb-sized piece of ginger

1/2 chopped chili

1 lime


Heat the oil in a large pan/wok. Once the oil is hot, add the beef and ginger and fry until the beef is cooked through and starting to brown.

Remove the beef from the pan and add all your vegetables. Add the soy sauce, fish sauce, rice vinegar anf a good squeeze of lime and fry gently until the vegetables soften and cook through. I like to leave a bit of crunch in them! Once the vegetables are cooked, add the beef back to the wok and mix everything thoroughly.

Serve with a sprinkling of sesame seeds, chopped chilis and lime juice.
