Gluten free & vegan cinnamon apple muffins

What is better in autumn than a good old autumn candle? I’ll tell you what! Homemade muffins that fill your home with a deliciously spicy, apple scent! And these guys are ideal for this! Not only are they gluten free but they’re also vegan and so easy to make!

Time

30 minutes

Ingredients

3 small apples

150g (plus 2 tbsps.) gluten free self raising flour blend (I used Doves Farm)

100g sugar

100ml almond milk (you might need a wee bit more if your mixture is too thick)

3 tsps. cinnamon

1 large banana (very ripe)

1 tsp. vanilla extract

Method

Chop 2 of the apples into small pieces then add to a bowl with 2 tbsps. of flour and 1 tsp. cinnamon and mix.

Slice the last apple into thin slices which will be used for topping the muffins.

In a mixing bowl, mash the banana then add the rest of the flour, sugar, milk, cinnamon, vanilla. Once thoroughly mixed, add the apple flour mixture and fold through.

In a greased muffin tray, spoon the mixture into the moulds then top with the sliced apple.

Pop in the oven for approx. 20 minutes (keep an eye on them, you don’t want the apples on top burning!).

Serve with custard, ice cream or just on their own and enjoy!
