What I Ate Wednesday (17.10.18)

This seems to be a common series that you see on blogs so I thought I’d jump on the bandwagon and start documenting what I eat on a Wednesday! 🙂 This is last weeks WIAW as I haven’t had dinner yet today!

Breakfast was two slices of Warburtons Gluten Free white loaf. I’m one of those people who loves very plain white bread and this stuff is so good! One with herby cream cheese, chicken and cucumber and the other with Nutella (I never used to be a huge Nutella fan but now I’m addicted!), along with two tiny tomatoes from my garden. For my 30th, I was very kindly given a juicer by my parents (I might have guided them with that gift choice!) so my mornings aren’t complete without a glass of fresh juice! This one was apple, cucumber and ginger- one of my favourites! And I couldn’t forget my cuppa! I’m a big tea drinker but unfortunately caffeine in tea and coffee doesn’t agree with me so it’s decaf all the way!

Lunch was a goats cheese and walnut salad as I’ve had a few days of eating too much junk food! Very simple salad of lettuce, cucumber, avocado, goats cheese and walnuts. I like to melt the cheese very slightly as it makes it feel more like a warm salad, suitable for autumn… don’t judge me!

As my snacks, I had a handful of raspberries (who doesn’t love a raspberry?!) and a gluten free orange & choc chip brownie bar from Aldi- these are incredible and if you haven’t tried them yet, you need to give them a go!

For dinner, we had my new favourite dish- which I could probably eat pretty much every night- ginger and soy tofu! It’s a game changer and has completely converted me to tofu! And even better, I’ve popped the recipe at the end of this for you lovely lot to give a try!
