Potato and chorizo hash

I am a sucker for potatoes and they tend to be what I reach for when I’m looking for a comforting (sometimes cheat!) meal! This one is not healthy but omg it is delicious! And I definitely live by the rule of everything in moderation! This recipe can definitely be mixed up by changing what you add to the potatoes, so try your faves! Serves 4.

Time

30 minutes

Ingredients

8 large potatoes (cubed)

Asparagus bundle (approx 200g)

100g chorizo

4 spring onions (green parts only)

2 tbsps butter

Salt and pepper

Method

First, cook your cubes potatoes in salted, boiling water for around 20 minutes until they begin to soften. Drain and leave to one side.

Chop your asparagus, chorizo and spring onions into small chunks and gently fry for a couple of minutes. Then add the potatoes, butter, salt and pepper and fry (turning every so often) for a further 10 minutes or so until the potatoes begin to brown and crisp!
