One thing I miss about being gluten free now is all things batter! It’s not easy getting a tasty, crunchy coating especially if you go out for dinner but this cornflake chicken is super easy, so tasty and amazingly crunchy! This recipe serves 2.
2 chicken breasts
4 tbsp gluten free plain flour
Around 50g gluten free cornflakes (use more if you like!)
1 tsp paprika
Salt and pepper
Preheat the oven to 180 degrees C and cut the chicken breasts into small bite-sized pieces.
Put the flour, paprika, salt and pepper into one bowl and mix. In another bowl, beat the egg. Use a zip bag to crunch up the cornflakes into smaller pieces then pour out onto a plate.
Coat each chicken piece in flour then dip in the egg and roll in the cornflakes ensuring as much of the chicken is coated as possible.
Lay all the nuggets out on a baking tray and bake for 20 minutes (turning halfway through) until cooked and golden.
Serve with whatever you like!!
