I find myself eating a lot of rice on FODMAP, especially when I feel I need a bit of stodge! This is one of my easy, go-to recipes when I want something comforting and quick! There are 2 ways of making this. If you want to go down the really easy route, try substituting the rice and half of the tomato purée with Uncle Ben’s Tomato and Basil Rice (there is 0.3% garlic in this so be careful if garlic is one of your triggers!). This recipe serves 2!
250g bag of microwave rice (told you this was easy!)
200g of spinach
1/2 courgette (chopped)
2 chopped spring onions (green part only)
6 cherry tomatoes
50ml lactofree cream
1 tbsp tomato purée
1 tbsp garlic-infused oil
1 tsp chilli paste
30g grated Parmesan
Salt and pepper
Gently fry the spring onions in a pan with the garlic oil for a couple of minutes then add the courgette, tomato puree and chilli paste and cook until the courgette starts to soften. (If using plain rice, add half a tin of chopped tomatoes here and cook until the sauce starts to reduce).
Then add salt, pepper, spinach, cherry tomatoes and rice and mix well until the spinach wilts and the rice starts to soften.
Add the cream and Parmesan, mix and allow to heat through then serve!
Such an easy dinner and you could serve with a piece of fish on the side if you wanted some protein!
