Another wee easy salad tonight 🙂 this is a lovely easy one that you can have as a side dish or as a vegetarian lunch! It’s low FODMAP so should be nice and kind to the tummy! Serves 2 as a side dish!
10 cherry tomatoes
1 tsp garlic-infused oil
Pinch of salt and pepper
Pinch of chili flakes
Peel the courgette into long strips and half the cherry tomatoes. In a bowl, mix the courgette and tomatoes with the garlic oil, salt and pepper.
Once everything is well mixed, add to a heated pan and gently fry for 5 minutes until the courgette starts to soften.
Sprinkle with chilli flakes, add a squeeze of lemon juice and serve!
