These are so tasty and ideal for Christmas as they look a bit like snowballs and they are by default gluten free! Really easy to make and SO moreish! This recipe makes around 24 macaroons so you might need to double it 😉
3 cups of desiccated coconut
4 large egg white
1/2 cup sugar
1 tsp vanilla extract
A pinch of salt
Preheat the oven to 180 degrees.
Whisk the egg whites, sugar, vanilla essence and salt together until the mixture starts to look frothy.
Fold the coconut through the egg white mixture until everything is evenly mixed.
Shape the mixture into small balls and place on a baking sheet. Bake for approx. 15 minutes or when the macaroons start to turn slightly golden.
Try not to eat all of them as soon as they come out of the oven!! 😉
